Z'Tejas Saffron Aioli Recipe
Ingredients
- 1/4 cup Dry White Wine
- 1 tablespoon Saffron Threads
- 2 Egg Yolks at room temperature
- 1 teaspoon Roasted Garlic
- 1 tablespoon Sherry Vinegar (use 2 tablespoons for a tarter taste)
- Salt to taste
- 1 teaspoon crushed Red Pepper Flakes
- 1 cup Olive Oil
Instructions
- Place a small pot over low heat.
- Add wine and saffron.
- Bring to a boil. Reduce heat slightly and simmer for 3 minutes or until wine develops a deep saffron color.
- Remove from heat. Strain and discard saffron. Set wine aside to cool completely.
- Add egg yolks, garlic, vinegar, salt and red pepper flakes to a blender. Purée for 30 seconds.
- With blender running, very slowly drizzle in oil. Mix until emulsified.
- Slowly add saffroned wine and blend thoroughly.
- Store in a tightly sealed container, in the refrigerator, until ready to serve.
