Gordon Biersch Czech-Style Pilsner Mustard Recipe
Ingredients
- 4 ounces Mustard Seeds
- 1 ounces Olive Oil
- 1 tablespoon minced Shallots
- 1 tablespoon Garlic minced
- 1 bottle Gordon Biersch Czech Style Pilsner Beer or other Pilsner-Style Beer of choice
- 1/2 cup Dijon Mustard
- 1/2 cup Whole Grain Mustard
- 2 ounces freshly squeezed Lemon Juice
- Salt and freshly ground Black Pepper to taste
Instructions
- Place mustard seeds in a medium pan.
- Roast the mustard seeds lightly over low heat on the stove.
- Remove seeds and set aside.
- Add olive oil to the pan.
- Add shallots and garlic. Sauté, but do not brown.
- When the aroma of the garlic is released, add beer. Bring to a boil. Simmer 1 minute.
- Remove and allow to cool to room temperature.
- Place Dijon mustard, whole grain mustard and lemon juice in a mixing bowl. Stir to mix well.
- Stir in cooked mustard/beer mixture.
- Taste. Add salt and pepper, to taste, if needed.
- Store in a tightly sealed container, in the refrigerator, until ready to serve and any leftovers for up to a week.
