Gordon Biersch Czech-Style Pilsner Mustard Recipe

- 4 ounces Mustard Seeds
- 1 ounces Olive Oil
- 1 tablespoon minced Shallots
- 1 tablespoon Garlic minced
- 1 bottle Gordon Biersch Czech Style Pilsner Beer or other Pilsner-Style Beer of choice
- 1/2 cup Dijon Mustard
- 1/2 cup Whole Grain Mustard
- 2 ounces freshly squeezed Lemon Juice
- Salt and freshly ground Black Pepper to taste
Place mustard seeds in a medium pan.
Roast the mustard seeds lightly over low heat on the stove.
Remove seeds and set aside.
Add olive oil to the pan.
Add shallots and garlic. Sauté, but do not brown.
When the aroma of the garlic is released, add beer. Bring to a boil. Simmer 1 minute.
Remove and allow to cool to room temperature.
Place Dijon mustard, whole grain mustard and lemon juice in a mixing bowl. Stir to mix well.
Stir in cooked mustard/beer mixture.
Taste. Add salt and pepper, to taste, if needed.
Store in a tightly sealed container, in the refrigerator, until ready to serve and any leftovers for up to a week.
