The Melting Pot Kirschwasser Swiss Cheese Fondue Recipe
Ingredients
- 8 ounces Swiss Cheese or Emmentaler Cheese shredded
- 6 ounces Gruyère Cheese shredded
- 2 tablespoons Cornstarch
- 1 cup Dry White Wine
- 2 tablespoons freshly squeezed Lemon Juice
- 1 tablespoon finely chopped Garlic
- 1 ounce Kirschwasser Cherry Flavored Liqueur
- 1/2 teaspoon freshly ground Black Pepper to taste
- Pinch ground Nutmeg
- 1/2 loaf French Bread torn into bite-sized pieces or cut into bite-sized cubes, to serve
- 1 Granny Smith Apple sliced, to serve
Instructions
- In a large bowl, add Swiss cheese, Gruyère cheese and cornstarch. Mix well. Set aside.
- Place a double boiler or fondue pot over medium heat. Add white wine, lemon juice and garlic. Heat for 1 - 2 minutes.
- Add 1/2 of the cheese mixture to the pot. Whisk until melted and smooth.
- Add the remaining cheese and again whisk until cheese has melted and is well combined.
- Pull the cheese away from one edge of the pot using a spatula. Pour Kirschwasser into the well created in the cheese on the side of the pot. Cook for 1 - 2 minutes (this allows the alcohol to cook off slightly before mixing). Mix well.
- Add black pepper and nutmeg. Mix well with a whisk.
- Serve the fondue with cubed bread and apples, to dip.
