Ingredients

  • 8 ounces Swiss Cheese or Emmentaler Cheese shredded
  • 6 ounces Gruyère Cheese shredded
  • 2 tablespoons Cornstarch
  • 1 cup Dry White Wine
  • 2 tablespoons freshly squeezed Lemon Juice
  • 1 tablespoon finely chopped Garlic
  • 1 ounce Kirschwasser Cherry Flavored Liqueur
  • 1/2 teaspoon freshly ground Black Pepper to taste
  • Pinch ground Nutmeg
  • 1/2 loaf French Bread torn into bite-sized pieces or cut into bite-sized cubes, to serve
  • 1 Granny Smith Apple sliced, to serve

Instructions

  • In a large bowl, add Swiss cheese, Gruyère cheese and cornstarch. Mix well. Set aside.
  • Place a double boiler or fondue pot over medium heat. Add white wine, lemon juice and garlic. Heat for 1 - 2 minutes.
  • Add 1/2 of the cheese mixture to the pot. Whisk until melted and smooth.
  • Add the remaining cheese and again whisk until cheese has melted and is well combined.
  • Pull the cheese away from one edge of the pot using a spatula. Pour Kirschwasser into the well created in the cheese on the side of the pot. Cook for 1 - 2 minutes (this allows the alcohol to cook off slightly before mixing). Mix well.
  • Add black pepper and nutmeg. Mix well with a whisk.
  • Serve the fondue with cubed bread and apples, to dip.
