The Capital Grille Filet Mignon Recipe
Ingredients
- Two 8-ounce Beef Tenderloin Steaks cut 1-inch thick
- 2 teaspoons Olive Oil
- 1/4 teaspoon Onion Powder
- Salt and freshly ground Black Pepper to taste
- 2 slices Bacon
- 2 tablespoons minced Shallots
Instructions
- Place oven rack in it's highest position. Set oven to Broil.
- Place steaks on a plate or cutting board.
- Rub steaks all over with olive oil.
- Sprinkle with onion powder and salt and pepper. Rub in.
- Wrap 1 slice of bacon around each steak. Secure ends with a toothpick.
- Place steaks onto a broiler pan.
- Place pan in hot oven. Broil for 5 to 7 minutes.
- Turn the steaks over. Sprinkle the tops with shallots. Place back in oven and broil for an additional 5 to 7 minutes, or until the steaks are cooked to your liking (See "Steak Degrees of Doneness" Chart below).

Steak Degrees of Doneness
- Rare: 95 – 105°F. Cool deep red center.
- Medium Rare: 115 – 125°F. Warm red center with a hint of pink.
- Medium: 130 – 140°F. Warm pink center.
- Medium Well: 150 – 160°F. Some pink in the center but mostly cooked through.
- Well: 165 – 175°F. No pink, cooked all the way through.
