Shrimp Scampi
Shrimp Scampi is a delicious seafood dish consisting of large, succulent shrimp sautéed in a flavorful sauce typically made with garlic, butter, white wine, lemon juice and sometimes parsley or red pepper flakes for added zing. The dish is known for its rich, buttery texture and bright, citrusy notes.
Often served over linguine or another type of pasta, it can be eaten alone or as an appetizer topping for toasted bread as it is in here in Olive Garden’s Sicilian Scampi.
Shrimp Scampi is a popular Italian-American classic that’s celebrated for its simplicity and exquisite taste, making it a favorite choice at seafood restaurants and home kitchens alike.

Olive Garden Sicilian Scampi Recipe
Ingredients
- 1 Loaf Ciabatta Bread or large Baguette
- 3/4 cup Butter
- 4 cloves Garlic minced
- 2 Green Onions chopped, white and green pieces separated
- 1 pound large Shrimp uncooked, shelled, deveined and tails removed
- 2/3 cup White Wine
- 15 - 20 Black Olives chopped
- 1 - 2 Roma Tomato seeded and diced finely
- Grated Parmesan Cheese to dust
- Fresh Basil torn or chopped into small pieces, to garnish
Instructions
- Slice into bread into 20 slices, at an angle, about 1/2 inch thick.
- Using a toaster, toaster oven or oven, toast bread slices slightly. Set aside and keep warm.
- Place butter in a large skillet.
- When butter has melted and is hot (do not burn), add garlic. Cook until just starting to get tender, about 2 minutes.
- Add white parts of onion. Cook until onion and garlic are tender and fragrant, about 5 minutes.
- Add shrimp. Cook until done.
- Remove skillet from heat. Spoon shrimp, onions and garlic (leave butter in skillet) out to a bowl and keep warm.
- Return skillet with butter to heat. Add wine and olives. Cook until lightly boiling, about 2 minutes. Remove from heat.
- Working quickly, arrange 5 slices of bread on each place in a star (or flower) pattern (See photo above).
- Place 1 shrimp on each bread. Spoon any remaining shrimp into center of plates.
- Scatter onions and garlic over bread slices.
- Spoon butter/wine/olive sauce over shrimp and bread.
- Spread tomatoes and green parts of onions over bread.
- Dust lightly with Parmesan cheese, to taste.
- Garnish with basil.
- Serve immediately.
