Dickey's Barbecue Pit Fried Okra Recipe
Ingredients
- 10 - 12 pieces Okra tops removed and sliced in 1/4-inch pieces
- 1 Egg beaten
- 1 cup Cornmeal
- 1/4 teaspoon Salt
- 1/4 teaspoon freshly ground Black Pepper to taste
- 1/2 cup Vegetable Oil
Instructions
- In a small bowl, soak okra slices in egg for 5 to 10 minutes.
- In a medium bowl, combine cornmeal, salt and pepper.
- Pour oil in a large skillet. Place over medium-high heat.
- When oil is hot and shimmering, remove okra slices from egg, a few at a time allowing excess egg to drip off, and dredge in the cornmeal mixture, coating evenly. Carefully place okra in hot oil. Cook, stirring continuously, until golden brown. Remove to a paper towel-covered plate to drain.
