The Flying Biscuit Café Green Salsa Recipe
Ingredients
- 1 1/2 pounds fresh Tomatillos
- 1/4 cup minced Yellow Onion
- 2 cloves Garlic peeled and minced
- 2 Serrano Peppers stemmed, seeded and chopped fine
- 1/2 teaspoon Kosher Salt to taste
- 1/4 teaspoon White Pepper to taste
- 3 tablespoons chopped fresh Cilantro
Instructions
- Preheat oven to 350°F.
- Peel the husks off the tomatillos. Place peeled tomatillos in a roasting pan.
- Add onion, garlic and serrano peppers.
- Place pan in preheated oven. Roast for 25 to 35 minutes. The tomatillos will break down and become juicy.
- Remove from oven and allow to cool.
- Pour or spoon entire mess into a food processor or mixing bowl. Process or mix until well-blended and chopped fine.
- Pour out of processor, if using, into a mixing bowl.
- Taste. Mix. Add salt and pepper, to taste. Mix again.
- Add cilantro. Mix.
- Store in a tightly sealed container, in the refrigerator, until chilled or until ready to serve.
