Ok so this looks like a recipe I wanna try. Do I grease the bowl when allowing the dough to rise? And should I knead the dough at any time? Thanx for your response.
I wouldn’t knead the dough. You’ll overwork it and make the doughnut tough. I do like to very lightly grease the bowl of any dough I am allowing to rise. So I would vote yes — but it might not be complete necessary.

Do you have to use whole milk for this or will 2% work?

I think either one would be fine. I’m pretty sure we actually used 2%.
