The Capital Grille Butternut Squash with Cranberry Pear Chutney Recipe
Ingredients
- 5 Butternut Squash
- 1/4 cup Olive Oil
- 2 teaspoons Kosher Salt
- 1 teaspoon freshly ground Black Pepper to taste
- 2 teaspoons freshly chopped Thyme
- 1/2 cup The Capital Grille Cranberry Pear Chutney (See Box Below for this Recipe)
Instructions
- Prepare The Capital Grille Cranberry Pear Chutney according to the recipe linked to in the Box below. Set aside.
- Preheat oven to 325°F.
- Wash all the squash in cold running water. Peel, cut in 1/2, top to bottom. Remove the seeds. Cut each squash into eight pieces.
- In a large mixing bowl, add squash cubes, oil, salt, pepper and fresh thyme. Toss to mix well.
- Place seasoned squash medley in a single layer on a sheet pan.
- Place pan in preheated oven. Roast 45 minutes or until tender.
- Place warm squash in a large side dish.
- Top with The Capital Grille Cranberry Pear Chutney.
- Serve immediately.

The Capital Grille Cranberry Pear Chutney Recipe
Ingredients
- 1 cup Cranberries fresh
- 1/2 cup granulated Sugar
- 1/4 cup light Brown Sugar
- 1/4 cup Golden Raisins
- 1 teaspoon ground Cinnamon
- 1/2 teaspoon ground Ginger
- Pinch of ground Cloves
- 1/2 cup Water
- 1/2 cup Onions finely diced
- 1/4 cup Celery finely diced
- 1/2 cup Pears peeled and finely diced
Instructions
- To a large saucepan add cranberries, granulated sugar, brown sugar, raisins, cinnamon, ginger, cloves and water.
- Place over medium high heat and bring to a boil. Reduce heat and simmer for 10 minutes, stirring occasionally.
- Add prepared onions, celery and pears. Continue to simmer for an additional 15 minutes.
- Remove from the heat and cool.
- Store in a tightly covered container, in the refrigerator, until ready to serve, and any left overs for up to 1 week.
