Joe’s Stone Crab Cole Slaw

Joe's Stone Crab Cole Slaw Recipe
Ingredients
Dressing
- 1/3 cup Cider Vinegar
- 3 tablespoons Sugar to taste
- 1 teaspoon Salt to taste
- 1/2 teaspoon freshly ground Black Pepper to taste
Slaw
- 1/2 medium size head Green Cabbage or One 16-ounce package shredded Cole Slaw Mix (Cabbage only)
- 2 large ripe Tomatoes cut crosswise into 1/4-inch slices
- 4 tablespoons Mayonnaise
- 2 tablespoons Sweet Pickle Relish
Instructions
Dressing
- In a large nonreactive mixing bowl, combine vinegar, sugar, salt and pepper. Whisk until the sugar and salt have dissolved.
- Taste. Add more sugar, salt and/or pepper, to taste as needed - The dressing should be highly seasoned.
Slaw
- Remove the core from the cabbage and discard.
- Finely shred cabbage in a food processor or using using a mandoline or sharp knife. You should have about 5 cups of cabbage.
- Add shredded cabbage to the bowl with the dressing, stir to mix. Let stand for 10 minutes.
- Mound the slaw on a platter or plates.
- Lean the tomato slices against the coleslaw (See picture above.)
- Garnish with dollops of mayonnaise on top.
- Place a spoonful of relish in the center of each.
- Serve cold.
