Chi-Chi's Mexican Shrimp Cocktail Recipe
Ingredients
- Chi-Chi’s Mexican Cocktail Sauce (See Box Below for a Link to this Recipe)
- 24 large raw fresh Shrimp
- 1 1/2 cups Water
- 1/2 cup freshly squeezed Lime Juice
- 2 teaspoons minced fresh Garlic
- 1 Jalapeño Pepper seeds and ribs removed, minced
- 2 teaspoons Salt
- 1 teaspoon Chili Powder
- Tortilla Chips to serve
- Lime Wedges to serve
Instructions
- Prepare Chi-Chi’s Mexican Cocktail Sauce according to the recipe linked to in the Box below. Set aside.
- Peel, devein and rinse the shrimp, leaving the tails attached, if desired. Set aside.
- Place a medium saucepan over medium high heat.
- Add water, lime juice, garlic, jalapeño, salt and chili powder. Bring to a boil.
- Cook until reduced to about 1 cup.
- Add shrimp. Bring back to a boil. Cook 1 to 2 minutes or until the shrimp turn pink.
- Remove from heat, cover and refrigerate until chilled.
- When shrimp have cooled, serve 4 per serving with (hanging on the side of the glass, in the traditional "Shrimp Cocktail Look") or mixed into the prepared Chi-Chi’s Mexican Cocktail Sauce, dressed up with tortilla chips and lime wedges.
