B.B. King's Blues Club Southern-Style Catfish Recipe
Ingredients
- Peanut Oil or Vegetable Oil for frying
- 2 whole Catfish Fillets cleaned
- 1 Egg
- 1 cup Milk
- 1/2 Cornmeal
- 1/4 cup All Purpose Flour
- 1 teaspoon Salt
- 1/2 teaspoon Cayenne Pepper
Instructions
- Pour oil in large cooking pot or Dutch oven to a depth of about 3 - 4 inches.
- Heat oil to 355°F.
- Wash and pat dry the catfish. Cut large pieces in 1/2 or 1/3, if desired.
- Place egg and milk in a shallow dish. Beat with a whisk.
- In another shallow bowl, combine cornmeal, flour, salt and pepper .
- Dip a catfish filet into the milk. Turn to coat well.
- Move catfish to cornmeal mixture. Turn to coat well, pressing with your hand to evenly coat. Set aside on a plate and repeat with all pieces.
- Carefully place breaded pieces, 1 or 2 at a time – do not crowd the fish, into the hot oil. Fry, turnning as needed to fry both sides, to a golden crisp.
- Remove to a paper towel-covered plate to drain. Do not cover; this will cause crust to become soggy.
- Serve hot with plenty of Tartar Sauce, Hush Puppies and Cole Slaw (See Box Below for Links to some Recipes).
