Bonefish Grill Steak Gorgonzola Recipe
Ingredients
- Bonefish Grill Herbed Gorgonzola Butter (See Box Below for this Recipe)
- 2 Tenderloin Steaks
- Extra Virgin Olive Oil
- McCormick Grillmate Steak Seasoning or your Favorite Steak Seasoning, store bought or homemade, of choice
Instructions
- Prepare Bonefish Grill Herbed Gorgonzola Butter according to the recipe in the Box below. Store in a tightly sealed container, in the refrigerator, until ready to use.
- One hour before cooking time, remove steaks from refrigerator and let come to room temperature.
- When ready to cook, pat steaks dry with a paper towel.
- Sprinkle steak seasoning over both sides of each steak. Rub in with your hand.
- Prepare steaks any way you choose - grill, bake, sous vide, sauté, - it is totally up to you. Here is an easy way to cook them on the stovetop.
- Place large heavy skillet over medium high heat.
- Drizzle olive oil to lightly coat the bottom.
- When oil is hot and shimmering, carefully place a steak (both steaks, if your skillet is big enough) onto the hot skillet. Cook about 6 minutes, and then flip and cook 5 - 6 more minutes for 1 1/2 inch thick steak. (See chart below for cooking times for various doneness.)
- Slice about 1/4 inch Gorgonzola butter disc off from the prepared butter log.
- Place on top of the hot steaks. (If the butter does not melt as much as you like, place the steaks on a cooking sheet, place in an oven on broil and broil until cheese gets melted and bubbly
- Serve hot.

Steak Degrees of Doneness
- Rare: 95 – 105°F. Cool deep red center.
- Medium Rare: 115 – 125°F. Warm red center with a hint of pink.
- Medium: 130 – 140°F. Warm pink center.
- Medium Well: 150 – 160°F. Some pink in the center but mostly cooked through.
- Well: 165 – 175°F. No pink, cooked all the way through.

Bonefish Grill Herbed Gorgonzola Butter Recipe
Ingredients
- 4 tablespoons Pine Nuts
- 1/2 teaspoon chopped fresh Rosemary
- 1/2 teaspoon chopped fresh Thyme
- 1/4 teaspoon ground Sage
- 4 tablespoons Butter
- 2 ounces Gorgonzola Cheese
Instructions
- Place a skillet over medium heat.
- Add pine nuts. Toast until fragrant. Remove from heat.
- To a food processor, add rosemary, thyme, sage, butter, Gorgonzola cheese, and toasted pine nuts. Grind to combine.
- Remove from processor to a work surface.
- Form butter into a log. Use immediately. Or wrap tightly with plastic wrap and store in the refrigerator, until ready to use.
