Cheesecake Factory Shrimp Creole Recipe
Ingredients
- 10 ounces medium Shrimp peeled deveined and tails cut off
- 1 teaspoon Cajun Spice Blend store bought or homemade, of choice (See Box below for Links to Some Good Recipes!)
- 2 teaspoons Rice Flour
- 1 tablespoon Vegetable Oil
- 4 ounces Red and Yellow Bell Peppers diced 1/2-inch
- 1/2 ounce Green Bell Peppers diced 1/2-inch
- 2 ounces Yellow Onions diced 1/4-inch
- 1 ounces Celery minced
- 2 teaspoons Garlic minced
- 4 ounces Roma Tomatoes peeled, seeded and diced
- 8 ounces Spicy Seafood Broth (See the Recipe Box below for this Recipe)
- 4 ounces Tasso Sauce (Recipes for Tasso Sauce are readily available in cookbooks, magazines and on the internet. It is best without any added cream in this recipe.)
- 1 ounce Green Onions chopped
- 8 ounces steamed White Rice
- 2 teaspoons fresh Parsley chopped, to garnish
Instructions
- Prepare Spicy Seafood Broth according to the recipe in the Recipe Box below. Set aside.
- Place shrimp into a small mixing bowl.
- Sprinkle Cajun spice blend and rice flour over shrimp. Toss to evenly coat. Cover the bowl. Place covered in the refrigerator until needed.
- Pour oil into a medium non-stick saute pan. Place over medium heat.
- When oil is hot and shimmering, add prepared red and yellow bell peppers, green bell peppers, yellow onions and celery. Cook until vegetables are tender and well caramelized.
- Add garlic. Cook, stirring quickly to avoid burning, until garlic is fragrant.
- Add shrimp and tomatoes. Stir the ingredients together until evenly combined.
- Ladle prepared spicy broth and tasso sauce into the pan, gently stirring and tossing to incorporate. Continue to cook for approximately 2 minutes or until the sauce has thickened slightly and all ingredients are heated through. Toss together once or twice while cooking so that all ingredients cook evenly.
- Add green onions into the pan, stirring gently together until evenly combined. Continue to cook for another 5 - 10 seconds or until shrimp are done.
- Pour shrimp creole into the serving bowls.
- Place prepared white rice into the center area of the bowl on top of the shrimp creole. Garnish each bowl with a sprinkle of chopped parsley.

Spicy Seafood Broth Recipe
Ingredients
- Shells and heads from 2 pounds Shrimp (or 1 cup bottled clam juice, if you don't have any shrimp heads and tails)
- 1 small Onion quartered
- 1 small inner Celery Stalk with Leaves coarsely chopped
- 1 Bouquet Garni (3 sprigs fresh Thyme, 1 small bunch Italian Parsley, and 1 Bay Leaf, tied together with cotton string)
- 2 teaspoons New Orleans-Style Seafood Seasoning
- 1/4 teaspoon Cayenne Pepper
- 2 quarts Cold Water
Instructions
- In a 4-quart saucepan, add shrimp shells and heads (or clam juice), prepared onion, celery, bouquet garni, seasoning, cayenne and water.
- Place over medium heat and slowly bring to a boil. Once boiling, reduce heat to low and gently simmer, partially covered, for 1 hour.
- Strain liquid through a colander lined with cheesecloth into another large pot, pressing on the ingredients and gently shaking them to extract the juices.
- Resulting stock can be used immediately or stored in the refrigerator for up to 3 days or in the freezer for up to 6 months.
