The Capital Grille Roasted Chanterelle Mushrooms
NOTE – To clean fresh chanterelles, pick off any large piece of dirt and then brush off the dirt with a soft, dry brush. If they are very dirty, washing may be required. Wash immediately before cooking to avoid the water soaking into the mushrooms. Never store wet mushrooms. Occasionally, you may find a few tiny insects on the inside of your chanterelles. Dunk the mushrooms in salted water for a few minutes prior to cooking to clean and remove these.
The Capital Grille Roasted Chanterelle Mushrooms Recipe
Ingredients
- 1 pound Chanterelle Mushrooms
- 1 clove Garlic finely chopped
- 1 sprig fresh Rosemary leaves pulled and finely chopped (discard stems)
- 2 sprigs fresh Thyme leaves pulled and finely chopped (discard stems)
- 2 tablespoons Extra Virgin Olive Oil
- 1 teaspoon Kosher Salt
- 1/2 teaspoon freshly ground Black Pepper to taste
- 2 tablespoons Unsalted Butter
Instructions
- Preheat oven to 425°F.
- Clean the chanterelles (See Note above this Box).
- In a large mixing bowl, add mushrooms, garlic, rosemary, thyme, olive oil, salt and pepper. Toss well to fully combine.
- Place the mushrooms on a clean baking pan.
- Place pan in preheated oven. Roast until tender, about 10 minutes.
- Remove mushrooms from the oven. Quickly place in a mixing bowl.
- Add butter. Toss to melt the butter and fully coat the mushrooms.
- Place on a clean platter and serve hot.
