Cracker Barrel Cornbread Muffins Recipe
Ingredients
- 1 cup Yellow Cornmeal
- 1 cup All-Purpose Flour
- 1/4 cup Granulated Sugar
- 1 tablespoon Baking Powder
- 1/2 teaspoon Salt
- 1/4 teaspoon Baking Soda
- 1 cup Buttermilk
- 2 large Eggs
- 1/4 cup unsalted Butter melted and slightly cooled
- 2 tablespoons Honey
Instructions
- Preheat oven to 375°F.
- Grease a 12-cup muffin tin or line with paper liners.
- To a large bowl, add cornmeal, flour, sugar, baking powder, salt and baking soda. Whisk until well-combined.
- In a separate bowl, whisk together buttermilk, eggs, melted butter, and honey until smooth.
- Slowly pour wet ingredients into bowl with the dry ingredients. Stir gently until just combined. Avoid overmixing to keep the muffins tender.
- Evenly divide batter among the prepared muffin cups, filling each about 2/3 full.
- Place pan in preheated oven and bake 15 - 18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Remove from oven and allow muffins to cool in the tin for 5 minutes. Transfer them to a wire rack to cool completely if not serving immediately.
- Serve warmed with butter alongside your favorite Cracker Barrel-style meal.
