Ingredients

  • 1 cup Yellow Cornmeal
  • 1 cup All-Purpose Flour
  • 1/4 cup Granulated Sugar
  • 1 tablespoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Baking Soda
  • 1 cup Buttermilk
  • 2 large Eggs
  • 1/4 cup unsalted Butter melted and slightly cooled
  • 2 tablespoons Honey

Instructions

  • Preheat oven to 375°F.
  • Grease a 12-cup muffin tin or line with paper liners.
  • To a large bowl, add cornmeal, flour, sugar, baking powder, salt and baking soda. Whisk until well-combined.
  • In a separate bowl, whisk together buttermilk, eggs, melted butter, and honey until smooth.
  • Slowly pour wet ingredients into bowl with the dry ingredients. Stir gently until just combined. Avoid overmixing to keep the muffins tender.
  • Evenly divide batter among the prepared muffin cups, filling each about 2/3 full.
  • Place pan in preheated oven and bake 15 - 18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Remove from oven and allow muffins to cool in the tin for 5 minutes. Transfer them to a wire rack to cool completely if not serving immediately.
  • Serve warmed with butter alongside your favorite Cracker Barrel-style meal.
