Chicken Quesadillas
Chicken Quesadillas are a delicious and popular Mexican dish enjoyed around the world. The tortillas can be either flour or corn, and they play a crucial role in defining the quesadilla’s taste and texture.
The chicken used in quesadillas is often seasoned with a mix of spices like cumin, chili powder and garlic, imparting a savory and slightly spicy flavor. Alongside the chicken, various ingredients like diced onions, bell peppers, jalapeños, and cilantro are frequently included to add depth and a touch of freshness to the dish.
Melted cheese, often a type like cheddar, Monterey Jack or queso fresco, binds the quesadilla together, providing creaminess and helping to unify the ingredients.
Chicken quesadillas can be served as a delightful appetizer, a quick snack, or a substantial meal when accompanied by side dishes like guacamole, sour cream, or salsa. The dish is typically prepared by heating in a skillet until the tortillas are crispy and the cheese has melted, resulting in a satisfying and comforting combination of flavors and textures.
Ruby Tuesday Spicy Chicken Quesadillas Recipe
Ingredients
- 1/2 teaspoon Cumin
- 1/2 teaspoon Smoked Paprika
- 1/2 teaspoon ground Red Pepper
- Salt to taste
- 2 large boneless, skinless Chicken Breasts, cooked and shredded
- 1 teaspoon Vegetable Oil
- 1 Green Bell Pepper cored, seeded and chopped
- 1/2 White Onion chopped
- 1 large Jalapeño Pepper chopped
- 1 clove Garlic minced
- 1 fresh ripe Tomato chopped
- 3 Green Onions chopped, separate white and green parts
- 2 tablespoons chopped fresh Cilantro
- 1/4 teaspoon Cumin
- 1/4 teaspoon Smoked Paprika
- 2 cups grated Colby Jack Cheese, Cheddar Cheese or other Cheese, of choice
- 6 Fajita-sized Flour Tortillas
- Lime Wedges 1 or 2 per finished fajita
- Sour Cream to serve
- Guacamole to serve
Instructions
- In a large bowl, add 1/2 teaspoon Cumin, 1/2 teaspoon Smoked Paprika, ground red pepper and salt. Mix well.
- Add shredded chicken, mix to coat completely. Set aside.
- Pour oil into a medium skillet. Place over medium heat.
- When oil is hot and shimmering, add green bell pepper, white onion, jalapeño and garlic. Cook until the garlic is fragrant, about 3-5 minutes.
- Add tomato, whites of the green onions, cilantro, 1/4 teaspoon cumin and 1/4 teaspoon paprika. Stir to combine. Remove from heat.
- Preheat oven to low, about 125°F.
- Spray a large frying pan with non-stick spray (a grill pan or griddle will work well, too)
- Set pan over medium heat (or adjust griddle accordingly).
- Place a single tortilla in the pan.
- Quickly, so as not to burn the tortilla, sprinkle a thin layer of cheese, about 3 tablespoons, over the entire surface.
- Add a layer of the vegetable mix, also about 3 tablespoons, to 1/2 of the tortilla.
- Top veggies with the same amount of shredded chicken.
- Sprinkle about a teaspoon reserved un-cooked green onions greens over all.
- Apply another 3 tablespoons of cheese to the top of everything.
- Drizzle with
- Cover and allow to cook and melt for about 2 - 3 minutes.
- Using a spatula, flip the un-topped half over the topped half, pressing lightly.
- Cover and cook another 2 - 3 minutes, until all the cheese has melted and the tortilla is crispy.
- Place finished quesadilla on the middle rack in preheated oven to stay warm.
- Repeat with more tortillas until all veggie and chicken mixes are used up.
- When ready to serve, cut with a pizza cutter or large knife into slices .
- Place 1 or 2 lime wedges on each plate.
- Serve hot with sour cream and/or guacamole and/or other Dipping Sauces, of choice.
