Mimi's Cafe Sweet Crepes Recipe
Ingredients
- 1 cup All-Purpose Flour
- 1/4 cup Sugar
- 1/2 cup Whole Milk
- 1/2 cup Water
- 3 Eggs
- 2 tablespoons unsalted Butter melted
- 1/2 teaspoon Salt
Instructions
- Add flour, sugar, water, milk, eggs, salt and butter to a blender. Blend for 20 to 30 seconds.
- Pour into a bowl. Cover and place in refrigerator for at least 2 hours, or overnight, for best results.
- Heat a crepe pan or a nonstick pan over medium high heat.
- Brush lightly with melted butter (or spray before heating with non stick spray).
- Pour in about 1 ounce of batter, just enough to cover bottom in a very thin layer. Swirl pan to cover bottom completely.
- Cook crepe about one minute. Flip over and finish for 20 seconds.
- Remove crepe to a plate.
- Repeat until all batter is used or you have enough crepes. Stack crepes as you finish to keep them moist.
- Serve warm.
- Store leftover batter and unused crepes in separate tightly sealed containers, in the refrigerator, until ready to use, up to one week.
