Fleming's Prime Steakhouse Filet with Shrimp Diablo Recipe
Ingredients
BBQ Butter
- 4 ounces lightly salted Butter at room temperature
- 1/2 teaspoon freshly ground Black Pepper to taste
- 1/4 teaspoon Cayenne Pepper
- 1 teaspoon Worcestershire Sauce
- 1 tablespoon minced Garlic
- 1/2 teaspoon Paprika
- 1/2 teaspoon Tabasco Sauce
- 1 teaspoon Rosemary Leaves minced
Diablo Butter Sauce
- 1/2 cup Heavy Cream
- 1/2 of prepared BBQ Butter
Steak and Shrimp
- 1 tablespoon Kosher Salt
- 1 tablespoon coarsely ground Black Pepper
- Six 6 ounce Filets
- Twelve 16/20 count Shrimp peeled, cleaned and deveined
- 1/4 teaspoon Red Chili Flakes
- BBQ Butter Sauce
- Diablo Butter Sauce
- 2 tablespoons Extra Virgin Olive Oil
Instructions
BBQ Butter
- Add 1/2 of the butter to a large sauté pan. Set over medium heat.
- Melt butter but do not brown.
- Add Garlic. Sauté for 5 to 6 minutes.
- Remove from the heat and allow to cool for 10 minutes.
- Place the cooled sautéed garlic and remaining softened butter into a large mixing bowl. Blend with a whip until smooth.
- Add remaining ingredients to the butter. Blend well.
- Divide in 1/2.
Diablo Butter Sauce
- Add cream to a sauce pot.
- Place over medium heat and bring to a slow boil. Let simmer about 5 minutes or until reduced by 1/2.
- Slowly add 1/2 of the prepared BBQ butter in chunks whisking until all is melted and creamy.
- Remove from heat and set aside.
Steak and Shrimp
- In a small bowl combine salt and pepper.
- Season both sides of each steak with mixture.
- Broil steaks to desired temperature (See box below).
- Place shrimp on a metal or oven-safe plate or cooking dish.
- Sprinkle with the red chili flakes. Place remaining 1/2 of BBQ butter on top.
- Place in oven and broil for 1 1/2 to 2 minutes tossing the shrimp on the plate while cooking.
- Remove from oven.
Plating and Serving
- Place a cooked steak in the center of each plate.
- Arrange 2 shrimp on top of the each steak.
- Ladle Diablo Butter Sauce over each shrimp and steak.
- Serve hot.

Steak Degrees of Doneness
- Rare: 95 – 105°F. Cool deep red center.
- Medium Rare: 115 – 125°F. Warm red center with a hint of pink.
- Medium: 130 – 140°F. Warm pink center.
- Medium Well: 150 – 160°F. Some pink in the center but mostly cooked through.
- Well: 165 – 175°F. No pink, cooked all the way through.
