Ruth's Chris Steak House Creamed Spinach Recipe
Ingredients
- 1 stick Salted Butter
- 1/4 cup All-Purpose Flour
- 2 tablespoons chopped Onion
- 1 Bay Leaf
- 1/4 teaspoon Salt
- 2 cups Milk or Half-and-Half
- 1 pound fresh Spinach thoroughly cleaned and stemmed
- 2 tablespoons Salted Soft Butter
- Salt and freshly ground Black Pepper to taste
Instructions
Béchamel Sauce
- Place 1 stick salted butter in a small saucepan. Place over medium heat.
- When butter has melted and is foamy (do not burn), add flour and stir until light brown in color.
- Add onion, bay leaf and 1/4 teaspoon salt. Mix.
- Whisk in milk, stirring until the mixture comes to a boil and thickens.
- Reduce heat and cook for 5 minutes.
- Remove from heat and pass through a fine strainer. The sauce will be very thick. Set aside.
Spinach
- Place a pot of water over high heat and bring to a boil.
- Cook spinach immersed in boiling water for 1 minute.
- Remove and refresh in iced water.
- Squeeze spinach until it is very dry.
- Purée in a food processor. Set aside.
Serve
- Just before serving, combine sauce with the puréed spinach in a medium pot.
- Cook over low heat, stirring often for about 5 minutes.
- Taste. Add salt and pepper, to taste.
- Finish by stirring in 2 tablespoons salted soft butter.
- Pour into a serving bowl and serve hot.
