- 1 stick Salted Butter
- 1/4 cup All-Purpose Flour
- 2 tablespoons chopped Onion
- 1 Bay Leaf
- 1/4 teaspoon Salt
- 2 cups Milk or Half-and-Half
- 1 pound fresh Spinach thoroughly cleaned and stemmed
- 2 tablespoons Salted Soft Butter
- Salt and freshly ground Black Pepper to taste
Béchamel Sauce
Place 1 stick salted butter in a small saucepan. Place over medium heat.
When butter has melted and is foamy (do not burn), add flour and stir until light brown in color.
Add onion, bay leaf and 1/4 teaspoon salt. Mix.
Whisk in milk, stirring until the mixture comes to a boil and thickens.
Reduce heat and cook for 5 minutes.
Remove from heat and pass through a fine strainer. The sauce will be very thick. Set aside.
Spinach
Place a pot of water over high heat and bring to a boil.
Cook spinach immersed in boiling water for 1 minute.
Remove and refresh in iced water.
Squeeze spinach until it is very dry.
Purée in a food processor. Set aside.
Serve
Just before serving, combine sauce with the puréed spinach in a medium pot.
Cook over low heat, stirring often for about 5 minutes.
Taste. Add salt and pepper, to taste.
Finish by stirring in 2 tablespoons salted soft butter.
Pour into a serving bowl and serve hot.
