Red Lobster Lobster, Spinach and Artichoke Dip Recipe
Ingredients
- 1 tablespoon Butter
- 1/2 cup Lobster Meat chopped
- 1 cup canned Artichokes drained and chopped
- 1 box frozen Spinach thawed and well-drained
- 2 packages Cream Cheese softened to room temperature
- 1/4 cup + 1 tablespoon freshly shredded Parmesan Cheese
- 1/4 cup Sour Cream
- 1/4 cup diced Tomatoes
- 2 tablespoons crumbled Goat Cheese
Instructions
- Place butter into a medium skillet. Place over medium heat.
- When butter has melted and is hot (do not burn), add lobster meat. Cook 2 - 3 minutes until meat is slightly firm to touch.
- Add artichokes and spinach. Stir gently to combine and heat through. Remove from heat.
- Add to cream cheese and 1/4 cup Parmesan cheese. Mix well until it is completely incorporated.
- Stir in Sour Cream.
- Place dip in an oven-proof serving dish.
- Sprinkle top with 1 tablespoon Parmesan cheese and Goat Cheese.
- Place dish on a cooking sheet and place under broiler set to medium. Heat until top browns. Watch closely and do not burn.
- Remove from oven and garnish with diced tomatoes.
- Serve hot with chips and/or other dippers.
