Ingredients

  • 1 tablespoon Butter
  • 1/2 cup Lobster Meat chopped
  • 1 cup canned Artichokes drained and chopped
  • 1 box frozen Spinach thawed and well-drained
  • 2 packages Cream Cheese softened to room temperature
  • 1/4 cup + 1 tablespoon freshly shredded Parmesan Cheese
  • 1/4 cup Sour Cream
  • 1/4 cup diced Tomatoes
  • 2 tablespoons crumbled Goat Cheese

Instructions

  • Place butter into a medium skillet. Place over medium heat.
  • When butter has melted and is hot (do not burn), add lobster meat. Cook 2 - 3 minutes until meat is slightly firm to touch.
  • Add artichokes and spinach. Stir gently to combine and heat through. Remove from heat.
  • Add to cream cheese and 1/4 cup Parmesan cheese. Mix well until it is completely incorporated.
  • Stir in Sour Cream.
  • Place dip in an oven-proof serving dish.
  • Sprinkle top with 1 tablespoon Parmesan cheese and Goat Cheese.
  • Place dish on a cooking sheet and place under broiler set to medium. Heat until top browns. Watch closely and do not burn.
  • Remove from oven and garnish with diced tomatoes.
  • Serve hot with chips and/or other dippers.
