Red Robin Southwest Chicken Recipe
Make our Red Robin Southwest Chicken Recipe at home. With our Secret Restaurant Recipe your Southwest Chicken will taste just like Red Robin.
Yield: 2 Servings
Ingredients
- 2 boneless, skinless Chicken Breasts or Thighs
- 1 package Grill Mates Chipotle Pepper Marinade
- 3 tablespoons Oil
- 1/4 cup Water
- 2 Lime Wedges for serving
Instructions
- To a small bowl, add Grill Mates Grill Mates Chipotle Pepper Marinade, oil and water. Mix well with a whisk.
- Pour mixture into a large sealable container or plastic bag.
- Place chicken breasts or thighs into the mixture. Seal and shake to cover completely.
- Place container in refrigerator and allow to marinate for at least 3 hours or overnight.
- Preheat grill to medium hot direct heat. Oil the grates.
- Remove chicken from the marinade, allowing excess to drip off.
- Place chicken on the grill. Cook until done on the bottom, about 5 - 8 minutes probably, but check for yourself. Turn over and grill other side until chicken is done all the way through and reaches an internal temperature of at least 165°F.
- Remove chicken from grill.
- Serve hot with lime wedges.
