Ingredients

• 5 pounds any variety Red-Skinned Potatoes
• 4 tablespoons Olive Oil
• 3 tablespoons Curry Powder
• 2 tablespoons Turmeric
• 1 tablespoon Garlic Powder
• 1 tablespoon Paprika
• Salt and freshly ground Black Pepper to taste

Instructions

• Preheat oven to 350°F.
• Wash the potatoes well. Cut potatoes into 6 or 8 wedges, depending upon the size.
• Place potato wedges in a large bowl. Add olive oil. Toss to coat.
• Add curry powder, turmeric, garlic powder and paprika to another large bowl.
• Add salt and pepper, to taste. Mix well.
• Add oiled potatoes. Toss to coat the potatoes with the spice mixture.
• Place spiced potatoes on a baking sheet.
• Place sheet in preheated oven. Bake for 30 minutes.
• Serve hot with plenty of good dipping sauces (See box below).
