Panda Express Thai Cashew Chicken Recipe
Ingredients
- 2 boneless, skinless Chicken Breasts
- 2 tablespoons Cornstarch
- 2 tablespoons Soy Sauce
- 2 tablespoons Dry Sherry
- 1/4 cup Hoisin Sauce
- 1/2 cup Chicken Broth
- 1/4 cup Peanut Oil
- 1 Green Bell Pepper cored, seeded and cut into strips
- 1 Red Bell Pepper cored, seeded and cut into strips
- One 8-ounce can Bamboo Shoots drained and sliced
- 1/2 cup salted Cashews
- 1 small can Mandarin Orange Sections to garnish, optional
- 2 tablespoons chopped Cilantro to garnish
- 2 Green Onions chopped, to garnish
Instructions
- Cut chicken in 1 inch cubes.
- In a bowl, add cornstarch, soy sauce, sherry, hoisin sauce and chicken broth. Mix well to create a cooking sauce.
- Add oil to a wok or large frying pan. Heat to medium.
- When oil is hot and shimmering, add chicken, green bell pepper strips and red pepper strips. Stir fry for 5 minutes
- Stir in bamboo shoots. Cook until heated.
- Pour prepared sauce over chicken. Stir fry until sauce thickens.
- Stir in cashews.
- Remove to a plate.
- Garnish with mandarin orange sections, cilantro, and green onions.
- Serve hot over rice or noodles.
