Recipe Notes
- Note 1 – If you do not have a grill or the weather is not cooperating, use a grill pan on the stove top or sear slices under the broiler. Adjust cooking instructions accordingly.
- Note 2 – You may want to use a grill basket or cover the grate with foil to keep the slices from falling though the grate.
Ruby Tuesday Grilled Zucchini Recipe
Ingredients
- 3 medium Zucchini cut into 1/2-inch thick slices
- 3 tablespoons Olive Oil
- 2 teaspoons Oregano
- 2 cloves Garlic minced
- 1/4 teaspoon Rosemary
- Salt and freshly Ground Black Pepper to taste
Instructions
- Preheat grill. (See Note 1 Above.)
- Place prepared zucchini slices in a large bowl.
- Add olive oil. Toss gently until all slices are fully coated with oil.
- In a small bowl or cup, mix together oregano, garlic, rosemary, salt and pepper.
- Sprinkle oregano mixture over zucchini slices turning and tossing as you do to fully cover the slices.
- Place slices on the grill (See Note 2 Above). Grill until zucchini is tender, about 4 minutes per side.
