Hot Chicken Wings
Hot Chicken Wings, exemplified by the iconic Buffalo Wings, have become a beloved appetizer and lunch favorite, renowned for their spicy kick and finger-licking goodness. Originating in Buffalo, New York, in the 1960s, Buffalo wings were created at the Anchor Bar by Teressa Bellissimo, who fried leftover wings and coated them in a tangy hot sauce, serving them with celery sticks and blue cheese dressing.
Initially a regional specialty, Buffalo wings gained national popularity in the United States during the 1980s and 1990s, thanks in part to the rise of sports bars and casual dining establishments. Today, they are a staple on menus across the country and around the world, with variations ranging from traditional hot sauce to exotic flavors like honey mustard, barbecue and garlic Parmesan.
The appeal of hot chicken wings lies not only in their fiery flavor but also in their versatility. They can be enjoyed as an appetizer, paired with celery sticks and dipping sauces, or as a main course, served with sides like fries or coleslaw. Their portability and convenience make them a popular choice for gatherings, parties, and sporting events, where they are often enjoyed alongside beer and other beverages.
The rise of hot chicken wings has also inspired competitions, festivals, and food challenges dedicated to showcasing the best and spiciest wings. Wing-eating contests have become a competitive sport, with participants vying to devour the most wings in a set amount of time.
Overall, hot chicken wings, particularly Buffalo wings, have transcended their humble beginnings to become a global culinary phenomenon, cherished for their bold flavors, communal appeal and irresistible finger-food status.

Ingredients
- 2 1/2 pounds Chicken Wings cut into "Drummettes" and "Planks" (leave "tips" connected to planks or cut off and discard), cooked completely in any manner you choose - grilled, baked, fried, deep fried, air-fried, etc. (This can be done in advance. Store in a tightly sealed container, in the refrigerator, until ready to use. Bring up to room temperature before using.)
- 12 ounces Louisiana Hot Sauce
- 6 tablespoons Butter or Margarine
- 1 1/4 teaspoon Cayenne Pepper
- 3 tablespoons White Vinegar
- 1 tablespoon Worcestershire Sauce
- 1/4 teaspoon Garlic Powder
- 1 1/2 tablespoon Flour
Instructions
- Preheat oven to 300°F.
- Add hot sauce, butter or margarine, cayenne pepper, vinegar, Worcestershire sauce and garlic powder to a sauce pan.
- Place over medium heat. Cook until butter has melted and sauce is simmering.
- Add flour and stir constantly to thicken.
- When sauce has thickened, remove from heat.
- Pour enough sauce into the base of a 9 x 13-inch baking dish to cover. Spread evenly.
- Add wings to remaining sauce. Toss to cover wings completely with sauce.
- Place wings in a baking dish. Arrange to a single layer or close to (just do not leave them in a "pile")
- Place dish in preheated oven and heat for 20 minutes or until wings becomes hot.
