El Torito Spanish Rice Recipe
Ingredients
- 2 tablespoons Oil
- 2 tablespoons chopped Onion
- 1 1/2 cups uncooked White Rice
- 2 cups Chicken Broth
- 1 cup Chunky Salsa store bought or homemade, of choice (See Box Below for Links to Recipes)
Instructions
- Add oil to a large, heavy skillet. Place over medium heat and heat until oil is hot and shimmering.
- Add onion. Cook, stirring, until tender and fragrant, about 5 minutes.
- Mix rice into skillet, stirring often.
- When rice begins to brown, stir in chicken broth and salsa. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.
- Serve hot.
