Recipe Notes
- Note 1 – If you prefer, you can precook the mushrooms to make them more tender and a bit less “wild” tasting.

- Spray a large skillet with nonstick spray. Heat over medium-high heat.
- Add all mushrooms and cook, stirring, until partially softened, about 2 minutes.
- Transfer to a medium bowl. Blot away excess moisture. Set aside.
- Add to pizza when instructed in the recipe below.
California Pizza Kitchen Wild Mushroom Pizza Recipe
Ingredients
- 1 prepared 12-ounce Pizza Dough
- All Purpose Flour as needed
- 1 tablespoon Extra-Virgin Olive Oil
- 1/2 cup shredded or torn Mozzarella Cheese
- 1/4 cup shaved or shredded Romano Cheese
- 1/2 cup thinly sliced or shaved Shiitake Mushrooms (See Note 1 above)
- 1/2 cup thinly sliced or shaved Baby Bella Mushrooms
- 1/2 cup thinly sliced or shaved Cremini Mushrooms
- 1/2 cup thinly sliced or shaved White Mushrooms
- 1 1/2 tablespoon chopped Scallions
- 2 - 4 tablespoons grated Parmesan Cheese
- 1/4 teaspoon Garlic Powder
- 1/2 teaspoon Cracked Black Pepper to taste
Instructions
- Preheat oven to 450°F and place a pizza stone on the lowest rack.
- Flour a work surface.
- Stretch pizza dough out to 12 inches on floured surface.
- Transfer dough to a floured pizza paddle - or a large pan or plate (so that you can move it to the oven when you have finished adding ingredients).
- Spread the olive oil then garlic over the base of the pizza dough. Making sure to leave a rim of about 1 inch around the pizza dough and do not any oil or toppings on the rim.
- Sprinkle on mozzarella and Romano cheeses.
- Evenly top with all mushrooms (See Note 1 above) and green onions.
- Sprinkle with Parmesan cheese and dust with garlic powder.
- Sprinkle about 1 tablespoon flour on hot pizza stone. Using your pizza paddle or plate transfer prepared pizza to the oven and place directly on stone.
- Bake pizza about 10 - 15 minutes, or until heated through and crust is golden brown.
- Remove from oven and dust with cracked black pepper.
- Allow to rest for 2 minutes.
- Slice into wedges and serve hot.
