Pappy’s Smokehouse Fritos Pie Recipe
Ingredients
- Two 2-ounce bags Fritos Original Corn Chips
- 2 cups Pappy’s Smokehouse Baked Beans or other Baked Beans of choice,
- 2 cups fully cooked sliced Hot Links, shredded Brisket, Pulled Pork or other bite-sized BBQ Meat pieces of choice
- Shredded Cheddar Cheese to top
- 1 Red Onion peeled and sliced
- Sour Cream to top
Instructions
- Pour 1 bag of Fritos Original Corn Chips into each of 2 bowls. Spread to cover bottom and up the sides, to make a shallow well in the center.
- Warm beans and BBQ meat on stove top or in microwave.
- Spoon 1 cup beans into each bowl atop chips. Spread evenly.
- Spoon 1 cup BBQ Meat into each bowl atop beans. Mound up in center.
- Sprinkle cheddar cheese liberally over the top of each bowl.
- Place bowls in microwave and heat on 1/2 heat until cheese has melted.
- ALTERNATELY - Place chips in OVEN-SAFE bowls. Heat beans and BBQ meat to a good eating temperature before adding as directed above. Spread cheese as directed. Place bowls on a baking sheet and place in oven set to broil. WATCHING VERY CLOSELY, heat until cheese has melted. Remove from oven and proceed below.
- Scatter onions over top of melted cheese.
- Top with a generous dollop of sour cream.
- Serve immediately.
