Bisquick Impossible Taco Pie Recipe
Ingredients
- 1 pound Ground Beef
- 1/2 cup chopped Onion
- One 1 1/4-ounce envelope Taco Seasoning or 1 1/4-ounce homemade Taco Seasoning of choice
- One 4-ounce can Chopped Green Chilies drained
- 1 1/4 cups Milk
- 3/4 cup Bisquick Baking Mix
- 3 Eggs
- 2 Tomatoes sliced
- 1 cup freshly shredded Monterey Jack Cheese or Cheddar Cheese or One 1-cup bag Mexican Blend or Taco Blend Cheese of choice
- 1/2 - 1 cup Sour Cream to top or serve
- 2 Tomatoes diced, to top or serve
- 1 Onion chopped small, to top or serve
- 2 cups shredded Lettuce to top or serve
Instructions
- Preheat oven to 400°F.
- Grease a 10-inch baking dish or 10 x 1 1/2-inch pie plate. Set aside.
- Place beef and onions in a large skillet.
- Place over medium heat. Cook, stirring and crumbling the beef, until beef is browned and onions are fragrant. Remove from heat and drain grease.
- Stir in taco seasoning.
- Spread beef mixture evenly in prepared dish or pie plate.
- Sprinkle drained green chilies evenly over top of beef.
- In a mixing bowl, add milk, Bisquick Baking Mix and eggs. Beat until smooth - about 15 seconds with a mixer or 1 minute by hand.
- Pour Bisquick mixture over beef and chilies.
- Place in preheated oven. Bake for 25 minutes.
- Remove from oven. Top with sliced tomatoes. Sprinkle evenly with shredded cheese.
- Return to hot oven and bake until a knife inserted between center and edge comes out clean, about 8 - 10 minutes longer.
- Remove from oven and let rest for 5 minutes.
- Top pie with (or serve on the side for your guests to top as they please) sour cream, diced tomatoes, chopped onions and shredded lettuce, if desired.
- Serve hot.
