Anthony’s Fish Grotto Lobster Quesadilla Recipe Notes
Be careful not to overcook because it will make the lobster tough.
Anthony's Fish Grotto Lobster Quesadilla Recipe
Ingredients
- 2 large Flour Tortilla
- 6 ounces Lobster Meat cut in small chunks
- 4 ounces Black Beans rinsed and drained
- 1/2 cup Cheddar Cheese shredded
- 1/2 cup Jack Cheese shredded
- 1/2 cup Queso Fresco Cheese crumbled
- 2 tablespoons Ortega Chilies chopped
- 2 tablespoons Pepitas (Roasted Pumpkin Seeds)
- 2 tablespoons Guacamole store bought or homemade
- 2 tablespoons Sour Cream
- 2 tablespoons Salsa store bought or homemade
- Cilantro chopped, to garnish
Instructions
- Lay out both tortillas flat on a work surface.
- Place 3 ounces lobster meat on 1/2 of each tortilla.
- Place 1/2 of all remaining ingredients atop lobster meat.
- Fold empty side of each tortilla over to cover filling.
- Preheat a large heavy-duty skillet over high heat.
- Reduce heat to medium and place one folded tortilla into hot skillet. Cook until until lightly browned. Turn over and grill other side. (See Note above this Box)
- Remove tortilla from skillet and place on a cutting board.
- Repeat with second quesadilla.
- Cut each quesadilla into four pieces.
- Place on a serving plates with a tablespoon each of guacamole, sour cream and salsa.
- Garnish with chopped cilantro.
