Yield: 8 Side Dishes
Ingredients
- 6 - 8 medium Carrots (about 3/4 pound)
- 3/4 - 1 cup Raisins to taste
- 1/4 - 1/2 cup Mayonnaise to taste
- 1 tablespoon Sugar to taste
- 2 teaspoons Apple Cider Vinegar
- Salt and freshly ground Black Pepper to taste
Instructions
- Peel the carrots.
- Using a food processor with a shredding disc or a grater, shred the carrots coarsely.
- Place shredded carrots in a large bowl.
- Add raisins. Toss to mix.
- In a small bowl, add mayonnaise, sugar and vinegar. Whisk to mix well.
- Taste. Adjust mayonnaise, sugar and vinegar, to taste. Add salt and pepper, to taste. Mix.
- Add prepared dressing to carrots and raisins. Toss to mix thoroughly.
- Store, covered, in the refrigerator, until ready to serve.
