Trader Vic's Nut Rum Pie Recipe
Ingredients
- One 9-inch Pie Crust or Shell store bought or homemade
- 4 Eggs
- 1/2 cup Sugar
- 1 cup Light Corn Syrup
- 1/4 cup melted Butter
- 1 teaspoon Vanilla Extract
- 2 tablespoons Dark Rum
- 1 cup coarsely chopped Pecans
- 1 cup chopped Dates
- Whipped Cream to serve
Instructions
- Preheat oven to 375°F.
- Place eggs into a medium bowl. Beat well.
- Add sugar, corn syrup, butter, vanilla and rum. Beat with a whisk until well-combined.
- Stir in pecans and dates. Mix well.
- Turn mixture out into unbaked pie shell.
- Place in preheated oven. Bake about 40 minutes, or until filling is set in center when pie is gently shaken.
- Remove pie from oven. Cool completely on a wire rack. Slightly chill before serving. Top pie slices with whipped cream when serving.
