    I have a few suggestions for this recipe that I have tested a couple of times now. First of all, double the filling amount. I used two bricks of cream cheese, two eggs and one cup of sugar. I didn’t increase the lemon juice but added in a teaspoon of vanilla. DO NOT mix all of the filling ingredients all at once. First, using the whisk attachment, beat the cream cheese only for about 2 minutes, it should be nice and fluffy. Then add in the sugar slowly. Beat for another 30 seconds and then add in the eggs. Beat the eggs until combined 30-60 seconds. I found that doing it this way keeps the filling light and you don’t get any lumps in the cream cheese.
