Popeyes Cajun Gravy Recipe
Ingredients
- 2 tablespoons Butter divided use
- 1/2 cup Onions chopped fine
- 1/2 cup Celery chopped fine
- 1 tablespoon Garlic minced
- 1/2 cup Red Bell Peppers cored, seeded and chopped fine
- 1/2 cup Flour
- 2 tablespoons Bacon Grease
- 1 teaspoon Cumin
- 1 teaspoon Smoked Paprika
- 1 teaspoon Cayenne Pepper
- 1 teaspoon Garlic Powder
- 1 teaspoon White Pepper
- 1 teaspoon dried Oregano
- 1 teaspoon dried Thyme
- 1/2 pound cooked and crumbled Ground Beef
- 1 cup Veal Stock
- 1 tablespoon Worcestershire Sauce
- 1 tablespoon Tabasco Sauce, or other Louisiana-Style Hot Sauce of choice
Instructions
- Add 1 tablespoon butter to a large skillet. Place over medium heat.
- When butter has melted and is hot (do not burn), add diced onions, celery, garlic and red bell peppers. Sauté 2 - 3 minutes, until fragrant. Remove the sautéed veggies from the skillet to a bowl and set aside.
- Return pan to heat (do not clean).
- To the same skillet, add 1 tablespoon butter, flour and bacon grease. Allow butter and grease to melt. Cook, stirring constantly, until mixture has a thickened, brown texture.
- Add sautéed veggies back into the pan. Stir well and cook for an additional 2 - 3 minutes.
- Add cumin, paprika, cayenne pepper, garlic powder, celery salt, white pepper, oregano and thyme. Bring the mixture to a boil. Cook, stirring, until the gravy starts to thicken.
- Reduce heat to a simmer.
- Add cooked ground beef, veal stock, Worcestershire sauce and Tabasco sauce. Cook until thickened to desired consistency.
- Serve hot.
