The Capital Grille Tenderloin Caesar Salad Recipe
Ingredients
- Four 8-ounce Beef Tenderloin Steaks
- Seasoned Salt
- 2 pounds Hearts of Romaine Lettuce torn
- 1 cup Caesar Croutons or other Croutons of choice
- 1 cup Caesar Salad Dressing, store bought or homemade, of choice (See Box Below for Links to Recipes)
- 3 Tomatoes quartered
- 4 tablespoons shredded Parmigiano-Reggiano Cheese
Instructions
- Season steaks liberally on both sides with seasoned salt.
- Grill medium rare to medium. (See Steak Degrees of Doneness Box below for Cooking Temperatures). Set aside.
- Place lettuce in large bowl.
- Add croutons. Mix well.
- Add dressing. Mix until greens and croutons are well-coated.
- Divide salad among 4 chilled plates.
- Slice each steak into 6 slices. Place the meat on the center of each salad.
- Garnish with tomato quarters.
- Sprinkle with Parmigiano-Reggiano cheese.

Caesar Salad Dressing Recipes
Steak Degrees of Doneness
- Rare: 95 – 105°F. Cool deep red center.
- Medium Rare: 115 – 125°F. Warm red center with a hint of pink.
- Medium: 130 – 140°F. Warm pink center.
- Medium Well: 150 – 160°F. Some pink in the center but mostly cooked through.
- Well: 165 – 175°F. No pink, cooked all the way through.
