Ruby Tuesday Broccoli Cheese Soup Recipe
Ingredients
- 1/4 cup 1/2 stick Butter
- 2 1/2 tablespoons Flour
- 1 gallon Water
- 4 1/2 ounces Chicken Broth
- 1/2 cup finely diced Onions
- 1/2 cup finely diced Celery
- 1/2 cup finely diced Carrots
- 2 pounds Pasteurized Processed Cheese (Velveeta) cut into 1-inch chunks
- 3/4 teaspoon Tabasco Sauce
- 1 tablespoon Worcestershire Sauce
- 16 ounces Heavy Cream
- Zest of 1/2 Lemon finely grated
- 1/2 teaspoon Dry Mustard
- 1/2 teaspoon White Pepper
- 20 ounces Broccoli finely cut
- Shredded Cheddar Cheese to serve
Instructions
- Place butter and flour in a small pan or skillet.
- Place over medium high heat.
- Cook, stirring constantly with a wire whip, for 2 minutes. Remove from heat and set aside.
- In a large pot or Dutch oven, add water, chicken broth, onions, celery and carrots.
- Place over medium high heat and bring to a boil.
- Once soup comes to a boil, stir in the cooked butter and flour mixture. Continue cooking for 3 minutes, stirring continuously.
- Reduce heat. Stir in cheese. Cook, stirring, until completely melted. Do not allow it to scorch.
- Add Tabasco sauce, Worcestershire sauce, cream, lemon zest, mustard, white pepper and broccoli. Return to a simmer, then remove from heat.
- Serve hot sprinkled with Cheddar cheese.
