Morton's The Steakhouse Shrimp Cocktail Recipe
Equipment
- Cheesecloth
Ingredients
Cocktail Sauce
- 1/2 cup Horseradish (Grated Horseradish, not Horseradish Sauce)
- 1 3/4 cup Chili Sauce
- 3/4 teaspoon Worcestershire Sauce
- 3/4 teaspoon freshly squeezed Lemon Juice
- 1/4 teaspoon Salt
- 1/8 teaspoon freshly ground Black Pepper
Shrimp
- 2 Lemons halved
- 3 Bay Leaves
- 2 cloves Garlic
- 1/4 cup White Sine
- 8 Peppercorns
- 24 large Shrimp (21-25 count), deveined and peeled, tails left on or 24 large prepared Frozen Shrimp
Instructions
Cocktail Sauce
- Place horseradish into the cheesecloth. Strain horseradish in the sieve for 2 - 3 minutes, or until reduced to 1/4 cup. Squeeze the cheesecloth to extract all the liquid.
- In a small mixing bowl add strained horseradish, chili sauce, Worcestershire sauce, lemon juice, salt and pepper. Whisk until completely blended.
- Taste. Add more salt and pepper, to taste, if needed.
- Serve immediately or store in a tightly sealed container, in the refrigerator, until ready to serve up to 7 days.
Shrimp
- Fill a large saucepan with water.
- Add the halved lemons, bay leaves, garlic cloves, white wine and peppercorns.
- Place saucepan over high heat and bring to boil. Then reduce heat to medium and simmer for 30 minutes.
- Add shrimp to the simmering water so they are completely immersed (add more water if needed).
- Increase heat and bring water to boil. Cook shrimp for 4 - 5 minutes if thawed or about 8 minutes if frozen.
- Remove from pan and place in an ice bath - a bowl filled with crushed ice and water - to stop the cooking and chill.
- If serving immediately, allow shrimp sit in ice bath for 15 - 20 minutes to chill completely. Otherwise, remove shrimp from bowl and place in a container.
- Cover and refrigerate for 1 - 2 hours or until ready to serve, no longer than overnight.
