Cocktail Sauce
- 1/2 cup Horseradish (Grated Horseradish, not Horseradish Sauce)
- 1 3/4 cup Chili Sauce
- 3/4 teaspoon Worcestershire Sauce
- 3/4 teaspoon freshly squeezed Lemon Juice
- 1/4 teaspoon Salt
- 1/8 teaspoon freshly ground Black Pepper
Shrimp
- 2 Lemons halved
- 3 Bay Leaves
- 2 cloves Garlic
- 1/4 cup White Sine
- 8 Peppercorns
- 24 large Shrimp (21-25 count), deveined and peeled, tails left on or 24 large prepared Frozen Shrimp
Cocktail Sauce
Place horseradish into the cheesecloth. Strain horseradish in the sieve for 2 - 3 minutes, or until reduced to 1/4 cup. Squeeze the cheesecloth to extract all the liquid.
In a small mixing bowl add strained horseradish, chili sauce, Worcestershire sauce, lemon juice, salt and pepper. Whisk until completely blended.
Taste. Add more salt and pepper, to taste, if needed.
Serve immediately or store in a tightly sealed container, in the refrigerator, until ready to serve up to 7 days.
Shrimp
Fill a large saucepan with water.
Add the halved lemons, bay leaves, garlic cloves, white wine and peppercorns.
Place saucepan over high heat and bring to boil. Then reduce heat to medium and simmer for 30 minutes.
Add shrimp to the simmering water so they are completely immersed (add more water if needed).
Increase heat and bring water to boil. Cook shrimp for 4 - 5 minutes if thawed or about 8 minutes if frozen.
Remove from pan and place in an ice bath - a bowl filled with crushed ice and water - to stop the cooking and chill.
If serving immediately, allow shrimp sit in ice bath for 15 - 20 minutes to chill completely. Otherwise, remove shrimp from bowl and place in a container.
Cover and refrigerate for 1 - 2 hours or until ready to serve, no longer than overnight.
