Thai Garlic Shrimp
Thai Garlic Shrimp—or Goong Kratiem Prik Thai—is the culinary equivalent of a well-timed love letter: bold, fragrant, and impossible to forget. This dish, deceptively simple, is a staple of Thai home kitchens, where its sizzling aroma spills from open windows and roadside stalls alike. It’s not a festival food or royal banquet fare, but something more intimate—comforting, craveable, and cooked with practiced hands.
The recipe is straightforward but punchy: shrimp seared over high heat with golden, crispy garlic, crushed black or white pepper, fish sauce, and sometimes a hint of oyster sauce for depth. What makes it so beloved isn’t complexity—it’s balance. Salty, savory, garlicky and slightly peppery, with the natural sweetness of the shrimp shining through. The garlic is not just seasoning; it’s star, chorus, and spotlight. Proper Thai technique involves pounding the garlic and peppercorns to release their oils before stir-frying—resulting in a dish that perfumes your whole kitchen in seconds.
Most popular in central Thailand, you’ll find Thai Garlic Shrimp served with steamed jasmine rice and sometimes a side of spicy nam pla prik (fish sauce with chopped chilies). It’s especially popular at beachside restaurants and casual eateries where seafood is king. In the U.S., upscale Thai bistros like Eurasia in Virginia Beach have brought refined versions to the table—more polished, but still true to their roots.
It’s the kind of dish that tastes like sunlight dancing on water—a humble marvel, built on a handful of ingredients and a whole lot of soul.
