Claim Jumper Loaded Potato Skins Recipe
Ingredients
- 10 - 12 Baked Potato Skin Halves, empty of Potato (reserve removed potato for another use or discard)
- 3 tablespoons Melted Butter
- Seasoned Salt to taste
- 3/4 cup shredded Cheddar Cheese
- 1/2 cup about 5 - 6 slices crispy fried Bacon, diced small
- 2 - 3 Green Onions green and white parts, diced
- Claim Jumper Sour Cream Chive Dip (Recipe below) to serve
Instructions
- Preheat oven to 350°F.
- Prepare Claim Jumper Sour Cream Chive Dip according to recipe below. Set aside.
- Brush potato shells with melted butter. Sprinkle lightly with seasoned salt, to taste.
- Place shells, skin-side down, on a baking sheet.
- Place in preheated oven and bake for 15 to 20 minutes, until crisp, but not dry and hard.
- Remove sheet from over. Sprinkle cheese into each baked shell.
- Sprinkle bacon and 1/2 of onion into all shells but 1.
- Place tray back in oven. Heat until cheese is melted and bubbling. Remove from oven.
- Place filled shells on a serving plate. Pile on top of each other, if desired.
- Fill remaining shell (the one with only cheese in it) with a healthy dollop of Claim Jumper Sour Cream Chive Dip. Sprinkle with 1 teaspoon Chives. Place on top of filled potatoes (See photo above). (Alternately, of course, fill all potatoes and serve Claim Jumper Sour Cream Chive Dip on the side in a small bowl.)
- Serve immediately, hot.

Claim Jumper Sour Cream Chive Dip Recipe
Ingredients
- 5 tablespoons Sour Cream
- 4 tablespoons fresh Chives chopped
- 2 teaspoons freshly squeezed Lemon Juice
- 1 pinch Salt
- 1 teaspoon Chives to garnish
Instructions
- Place all ingredients, except 1 teaspoon Chives, in a small bowl. Mix well.
- Serve immediately, sprinkled with 1 teaspoon Chives.
- Or store, covered, in the refrigerator until ready to serve.
- Store any remaining dip, in a sealed container, in the refrigerator up to a week, if desired.
