Abuelo's Papas con Chile Recipe
Ingredients
- 2 tablespoons Shortening
- 2 cups Potatoes peeled and thinly sliced
- 1/4 cup chopped Onions
- 1/2 teaspoon Garlic Salt
- 1/2 teaspoon Salt
- 1/2 cup chopped Green Chilies
- 2 cups Water
- Sour Cream to taste
- 3 slices Bacon cooked crispy and crumbled
Instructions
- Place shortening in a large skillet. Place over medium heat.
- When shortening is hot, add sliced potatoes. Cook, turning mass over occasionally, until potatoes are beginning to brown.
- Add onions, garlic salt and salt. Continue to cook until onions are tender.
- Add green chilies and water. Reduce heat to low and simmer for 15 - 20 minutes.
- Remove potatoes to a serving bowl, with a slotted spoon or strainer, to leave water in skillet.
- Serve hot with added sour cream and crumbled bacon scattered over the top.
