Carrabba's Italian Grill Spiedino di Mare Recipe
Equipment
- Wooden, Bamboo or Metal Skewers (If using wooden or bamboo skewers, soak in water 1/2 hour.)
Ingredients
Seafood Skewers
- 8 large Shrimp peeled, deveined and tails removed
- 8 large Sea Scallops
- 1 cup Italian Breadcrumbs
- 1/2 cup grated Parmesan Cheese
- 2 tablespoons Olive Oil
- Salt and freshly ground Black Pepper to taste
Lemon Butter Sauce
- 4 tablespoons unsalted Butter
- 2 cloves Garlic minced
- 2 tablespoons freshly squeezed Lemon Juice
- 1/4 cup Dry White Wine
- 1 tablespoon chopped fresh Parsley
- Salt and freshly ground Black Pepper to taste
Instructions
Seafood
- Pat shrimp and scallops dry with paper towels.
- Season with salt and pepper.
- Place breadcrumbs and Parmesan cheese in a shallow dish. Mix well.
- Lightly coat each shrimp and scallop with olive oil.
- Roll in the breadcrumb mixture to cover completely.
- Thread shrimp and scallops alternately onto prepared skewers.
- Preheat grill or grill pan to medium-high heat.
- Lightly oil the grates.
- Grill the skewers for 2 - 3 minutes per side or until the seafood is cooked through and golden.
- Season with salt and pepper, to taste.
Lemon Butter Sauce
- Place butter into a small skillet. Place over medium heat.
- When butter has melted and is hot (do not burn), add garlic and sauté until fragrant, about 1 minute.
- Add white wine and lemon juice, Cook for 2 minutes to reduce slightly.
- Stir in parsley.
- Season with salt and pepper, to taste.
To Serve
- Drizzle prepared lemon butter sauce over the grilled seafood skewers.
- Serve immediately, hot.
