Equipment

  • Wooden, Bamboo or Metal Skewers (If using wooden or bamboo skewers, soak in water 1/2 hour.)

Ingredients

Seafood Skewers

  • 8 large Shrimp peeled, deveined and tails removed
  • 8 large Sea Scallops
  • 1 cup Italian Breadcrumbs
  • 1/2 cup grated Parmesan Cheese
  • 2 tablespoons Olive Oil
  • Salt and freshly ground Black Pepper to taste

Lemon Butter Sauce

  • 4 tablespoons unsalted Butter
  • 2 cloves Garlic minced
  • 2 tablespoons freshly squeezed Lemon Juice
  • 1/4 cup Dry White Wine
  • 1 tablespoon chopped fresh Parsley
  • Salt and freshly ground Black Pepper to taste

Instructions

Seafood

  • Pat shrimp and scallops dry with paper towels.
  • Season with salt and pepper.
  • Place breadcrumbs and Parmesan cheese in a shallow dish. Mix well.
  • Lightly coat each shrimp and scallop with olive oil.
  • Roll in the breadcrumb mixture to cover completely.
  • Thread shrimp and scallops alternately onto prepared skewers.
  • Preheat grill or grill pan to medium-high heat.
  • Lightly oil the grates.
  • Grill the skewers for 2 - 3 minutes per side or until the seafood is cooked through and golden.
  • Season with salt and pepper, to taste.

Lemon Butter Sauce

  • Place butter into a small skillet. Place over medium heat.
  • When butter has melted and is hot (do not burn), add garlic and sauté until fragrant, about 1 minute.
  • Add white wine and lemon juice, Cook for 2 minutes to reduce slightly.
  • Stir in parsley.
  • Season with salt and pepper, to taste.

To Serve

  • Drizzle prepared lemon butter sauce over the grilled seafood skewers.
  • Serve immediately, hot.
