Grilled Artichokes

Houston's Grilled Artichokes Recipe
Ingredients
- Houston's Remoulade Sauce (See "Spotlight Recipes" below for a Link to this Recipe)
- 2 large fresh Artichokes
- 1 Lemon cut into quarters
- 3/4 cup Butter melted
- 4 cloves Garlic peeled and chopped
- 1 teaspoon Salt
- 1/2 teaspoon freshly ground Black Pepper to taste
- Parley chopped fine, for garnishing
Instructions
- Prepare Houston's Remoulade Sauce according to the recipe linked to in "Spotlight Recipes" below. Set aside.
- Trim ends of leaves from the artichokes. Cut in 1/2 lengthwise. Remove the fuzzy choke.
- Squeeze a bit of lemon on immediately to prevent browning. If preparing artichokes ahead of time, place them in a bowl of lemon water until ready to cook. (Whole Artichokes can be intimidating. If unsure about how to properly prepare an artichoke, please search online for a video demonstration.)
- Place artichokes in a pressure cooker. Cook for about 8 minutes according to the instructions for your cooker.
- Remove artichokes from cooker.
- Preheat an outdoor grill for medium-high heat.
- Squeeze remaining lemon wedges into a medium bowl.
- Stir in melted butter and garlic. Season, to taste, with salt and pepper.
- Brush artichokes with a nice coating of butter.
- Place on the preheated grill. Grill artichokes for 5 to 10 minutes, basting with butter and turning frequently, until the tips are a little charred.
- Remove from grill and sprinkle with a small bit of chopped parsley.
- Serve immediately with Houston's Remoulade.
